Sweet Potato Casserole



Ingredients:


Filling:

4 cups mashed sweet potatoes
1 cup brown sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/2 cup milk
1/3 cup melted butter


Topping:

1/2 cup brown sugar

1/3 cup flour

1/3 cup melted butter

1 cup chopped pecans
mini marshmellows

Preheat the oven to 350
°.

Fold the first 6 ingredients in together in a large bowl. Pour into a buttered 2-quart casserole dish. Mix remaining ingredients together in a separate bowl and spread over the top of the sweet potato filling. Sprinkle the top with mini marshmellows.


Put the casserole into the oven and bake for 45 minutes, or until the topping is browned and slightly crunchy, and the marshmellows are all melty and toasted. and delicious. I've never seen my dad enjoy a sweet dish so much.
Serves 6 to 8.

  1. Any dish that calls for marshmallows is right by me. Especially Revenge, like if someone hates marshmallows or something, and then you give one to them. Because they have it coming.

    What's your opinion on cooking for yourself? I've found that a lot of people like to cook but only for others, with an audience. In my experience, the only food that I refuse to do only for myself is sushi, because the rice takes so long and it's not worth the effort. Outside of that, I find good cooking to be more frequently a solo exercise, as audience or not, very little is as pleasurable as bouncing around the kitchen with a glass of wine and good music, planning and executing your own sensory gift.
